Passover Keto Bars!

CHOCOLATE SALTED CARAMEL & HAZELNUTS RECIPE, GRAIN FREE GLUTEN FREE!

My favourite Passover hobby is making desserts! (while listening to Ladino music ❤️). But I can’t eat grains or coconut so I came up with this gluten free recipe for Passover Keto Bars! These low carb Chocolate salted Caramel & Hazelnuts bars are grain free & gluten free & were the hit of the night @ our Seder dinner! I’m glad I took some photos before they were gone 🙂

Recipe

Ingredients:
400 gr 85% dark chocolate
60 gr butter
200 ml heavy cream
2 table spoons stevia / erythritol granulated sweetener
1 cup roasted hazelnuts A pinch of salt

Recipe:
In a saucepan combine butter, heavy cream & sweetener and bring to a boil for 5 minutes while stirring.
When you see the liquid start to change colour dim the heat and let simmer for about 15 more minutes while constantly stirring.
Stop when the liquid looks dark yellow / light brown and reaches a thick & rich consistency.
Let cool.
Meanwhile, melt the chocolate in a Bain Marie.
Pour the chocolate into a silicone frame (can also be individual frames for each bar).
Add the salt to the caramel and stir slightly.
Pour chunks of the caramel on top of the chocolate with a spoon / spatula (don’t combine too well).
Decorate with hazelnuts (I like adding at least 1-2 nuts per bite size).
Let cool in room temperature or in the bridge / freezer if you want a fast snack.
Cut to bas before they Haden completely, otherwise they’re prone to break and won’t look as pretty as in the photos 🙂
